Starlight Cupcakes

Simple batter prepared from all-purpose flour, sugar, shortening, milk, baking powder, salt, vanilla and eggs. Cupcakes are baked until light golden brown, cooled and frosted as desired.

Ingredients -
2 cups All-Purpose Flour
1-1/2 cups Sugar
1/2 cup Shortening
1 cup Milk
3-1/2 teaspoons Baking Powder
1 teaspoon Salt
1 teaspoon Vanilla
3 Large Eggs
 
Preparation:

1. Preheat the oven to 350 F.

2. Beat all ingredients in large bowl on medium speed, scraping bowl constantly, until blended, about 30 seconds.

3. Beat on high speed, scraping bowl occasionally, 3 minutes.

4. Pour into paper-lined medium muffin cups, 2 1/2 x 1 1/4 inches, filling each half full.

5. Bake until wooden pick inserted in center comes out clean, 20 to 25 minutes.

6. Immediately remove from pans.

7. Cool completely.

Baking powder is a combination of baking soda and acids designed to activate when combined with liquids and heated. Baking powder is best when fresh. Store baking powder in an airtight container for up to a year.
