Praline Cupcakes

 
Ingredients -
1/3 cup Butter, softened
2 cups sifted Cake Flour
1 cup Sugar
2 teaspoons Baking Powder
1/2 teaspoon Salt
3/4 cup Milk
1 Egg
1 teaspoon Vanilla Extract
1/2 cup chopped Pecans

Praline Topping:
1/4 cup melted Butter
3/4 cup Brown Sugar
18 Pecan Halves
 
Preparation:

1. Preheat oven to 375 F.

2. Line muffin pans with paper cupcake liners.

3. Cream the softened butter in a mixing bowl.

4. Sift in flour, sugar, baking powder, and salt.

5. Add about half of the milk and the egg.

6. Mix until the flour is thoroughly moistened.

7. Beat for 2 minutes.

8. Add the remaining milk and the vanilla.

9. Beat for one minute longer.

10. Stir in the chopped pecans.

11. Fill the cupcake liners about 1/2 full with the batter.

12. Bake for 25 minutes or until the cupcake springs back when lightly touched with a finger.

Praline Topping:

1. Combine the melted butter and the brown sugar.

2. Spoon over the hot cupcakes.

3. Place a pecan half in the center of each cupcake.

4. Return to oven and bake for five minutes longer.

To speed the warming of butter, remove from the refrigerator and cut into thin slices.

Pecans

Pecans should be stored in an airtight container for up to 3 months. After that they should be replaced as the oils will eventually turn rancid.
