Maple Frosting

 
Ingredients -
3/4 cup Light Brown Sugar
2-1/2 tablespoons Water
1 Egg White
1/4 teaspoon Maple Flavoring
 
Preparation:

1. Cook 3/4 cup brown sugar, the water, and egg white in top of double boiler or stainless steel mixing bowl over simmering water.

2. Beat constantly until frosting forms peaks, about 7 minutes.

3. The frosting should register 140° on an instant read thermometer.

4. Add the maple flavoring.
