Macaroon Cupcakes

 
Ingredients -
3/4 cup All-Purpose Flour
1/2 teaspoon Baking Powder
1 cup Granulated Sugar
1/2 teaspoon Salt
6 Egg Whites
1/2 teaspoon Cream of Tartar
1/3 cup Granulated Sugar
1/2 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract
1 cup moist Coconut
 
Preparation:

1. Preheat oven to 300 degrees F.

2. Sift together into mixing bowl the flour, baking powder, 1 cup sugar and salt.

3. In separate bowl, beat egg whites until foamy.

4. Add cream of tartar and continue to beat until stiff.

5. Fold in 1/3 cup sugar and add flavorings.

6. Fold egg white mixture into sifted dry ingredients.

7. Fold in coconut.

8. Half fill paper cupcake liners with batter and bake for 40 minutes.

Water in Butter

When butter is cold it should be hard to the touch. If your butter is pliable when cold, it may contain too much water for the best results if used in baked goods.

Cream of tartar is produced from the buildup of tartaric acid that forms inside wine barrels as the wine ages. It is a main component in the making of baking powder and can be found in recipes as a leavener.
