Golden Vanilla Cupcakes

Butter creamed with sugar until light and fluffy. Mixture is combined with egg, all-purpose flour, baking powder, salt, milk and vanilla extract. Batter is spooned into muffin tins and baked until firm and golden. Cooled and decorated as desired.

Ingredients -
1/3 cup Butter, softened
3/4 cup Sugar
1 Egg
1-3/4 cups All-Purpose Flour
2-1/2 teaspoons Baking Powder
1/2 teaspoon Salt
3/4 cup Milk
1 teaspoon Vanilla Extract
 
Preparation:

1. Preheat oven to 350 degrees F.

2. Cream butter, then gradually add sugar, beating at medium speed of an electric mixer until light and fluffy.

3. Add egg, beating well.

4. Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

5. Mix well after each addition. Stir in vanilla.

6. Spoon batter into paper-lined muffin tins, filling 1/2 full.

7. Bake for 18 minutes or until they test done.

8. Frost with any frosting you prefer.

9. Makes about 1 1/2 dozen.

Butter Grades

Grade AA butter has the mildest, sweetest flavor. Grade A has a slightly stronger more acidic flavor, and Grade B has and even stronger flavor.

Baking powder, when fresh and stored properly makes a reliable leavening agent for cakes, cookies, and quick breads. Baking powder and baking soda are not interchangeable.
